We've bought the kits to make gingerbread houses the last couple of years and they've turned out great and were amazingly easy to put together! This year the kids wanted to make their own and complained about past years not being able to eat it after Christmas because it was rock hard. So I decided to buy the stuff to make them so they could each make their own and eat the various treats as we went along. Much harder route!

We ended up getting them done though, but the kids got frusterated having to hold the walls while they dried, candy sliding, roofs collapsing, etc. etc.



After Blake's roof collapsed multiple times he opted for a flat adobe style house.

Only Blake would have guys playing catch in the front yard of his ginerbread house!

We've done those for Primary parties and one of the kids just covers his tray with icing and sticks the crackers and candy on flat. Too funny.
I've never gotten into the gingerbread house thing, but graham crackers seem to be a good compromise... easy to assemble, and edible. Good for you for being so gung-ho, though!
